How we source
- Direct relationships with farms and producer groups in Chiapas, Veracruz and Oaxaca
- Good agricultural practices and fair labour practices as a condition of every lot
- Full lot traceability from farm region to our Vancouver warehouse
Certifications
- Certified Organic: our Chiapas lot is certified by Mayacert, an accredited organic certification body.
- Chemical-free decaf: our decaf is Mexican coffee decaffeinated with a water process, using only water to remove caffeine, with no chemical solvents.
Quality control
- Pre-shipment samples are cupped at origin following SCA protocols.
- Arrival samples are cupped again in Canada and checked for moisture.
- Each lot is published with its SCA score, cupping notes and harvest year.
Consistency all year
Our year-round lots come from high-capacity farms, so we can deliver the same cup profile across the year. For roasters, that means fewer re-dials and a stable house coffee.
