Most of Mexico's specialty coffee comes from three southern states: Chiapas, Veracruz and Oaxaca. They share a harvest season, roughly November to March, and a reputation for sweet, balanced coffee, but each one has its own character in the cup.

Chiapas: balanced and consistent
Chiapas, on the border with Guatemala, is Mexico's largest coffee-producing state. Coffee grows on volcanic soils in the Sierra Madre de Chiapas and the Soconusco region, mostly under shade. The result is a round, sweet, chocolate-forward cup that roasters rely on for consistency. Our Chiapas coffee is Certified Organic by Mayacert and comes from high-capacity farms that keep quality steady all year.
Veracruz: where Mexican coffee began
Coffee first arrived in Mexico through Veracruz in the late 18th century. Today it grows on the misty slopes around Coatepec, Xalapa, Huatusco and Córdoba, near the Pico de Orizaba volcano. Veracruz coffee tends to be brighter and cleaner than Chiapas, with nutty sweetness and a lively citrus finish.
Oaxaca: delicate and complex
Oaxaca grows smaller volumes, often on Indigenous community farms in remote mountains. The Sierra Sur around Pluma Hidalgo gave its name to the Pluma variety. Oaxaca coffee is typically more delicate and floral, which makes it a natural home for microlots.
Which one should you choose?
- For a reliable house coffee or espresso: Chiapas.
